If you're anything like me and spend half your life googling "healthy recipes" then this is for you.
I've decided to share some of my favourite recipes on here. Some I found googling for hours, some I've made up myself (don't worry I've tried them and they are safe to eat) and some I've swapped and changed.
Todays recipe is a healthy winters chicken curry. I decided to join a few curries together I found and I can safely say it was AMAZING. Even Ryan will vouch for me. This recipe is also great to double and freeze for the nights you're just too busy.
2 chicken breasts chopped
1/4 of a cauliflower chopped
1 carrot diced
200g chickpeas ( rinsed and drained )
punnet of cherry tomatoes chopped
1/2 tsp minced garlic
1.5 tsp coriander
1tsp cumin
1 tsp turmeric
salt and pepper
pinch cayenne pepper if you like spice
3/4 cup Light coconut milk
2 cups spinach leaves
1 cup vegetable stock
Heat olive in a pan and cook chicken until almost cooked through (will continue to cook after)
Add garlic, cauliflower, carrot- cook for a few minutes. Then add the spices and stir through. Add stock, coconut milk, chickpeas & tomatoes.
Cook for 15 mins, stir through spinach leaves and cook for a further 5mins. ( you can leave this curry on as long as you like if you wanted )
Serve on some brown rice. ENJOY ( top with fresh coriander if it doesn't taste like soap to you )
